This Watermelon Salsa is the ultimate homemade salsa recipe for the summer. It takes minutes to prepare and is so refreshing with every bite. Serve it with grilled proteins or as a snack, it will be a favorite with your family and friends instantly.

I’m always on a homemade salsa kick and this Watermelon Salsa is one of my favorites of the summer! It’s so easy to stir together in about 10 minutes and I guarantee it will be gone in no time (in our house it is!). I serve it on top of fish, alongside steak, or even in tacos. It’s a summery way to add that juicy sweet and crunchy flavor – trust me it’s SO good!!

Ingredients

  • Seedless watermelon: Make sure it’s ripe watermelon and also seedless for ease.
  • Red onion: Soak the onion for 10 minutes in ice water, then drain and pat dry to remove the bite.
  • Jalapeno peppers: Adds a kick of heat. Omit the seeds for a more mild salsa.
  • Fresh cilantro: Fresh and vibrant to compliment the sweet and juicy watermelon.
  • Lime: The acid heightens all of the fruity flavors.
  • Agave nectar: A little bit sweetens the salsa perfectly.
  • Salt: Enhances the flavor of the salsa. You should always salt your watermelon, it brings out the natural sweetness of the fruit!

How to Make Watermelon Salsa

  1. Chop up the watermelon, jalapeno and red onion.

2. Add in the lime juice, agave nectar, cilantro and salt and mix well.

  • Don’t make this too far in advance. This is best served fresh so that it can be bright and bold in flavor, rather than muddied.
  • Always look for ripe watermelon. It should be heavy when picking it up, dark green skin with a bright yellow spot, and hollow when you give it a gentle knock.
  • Dice the watermelon small to match the size of the onion. It’s best when everything is cut the same size so you can get an equal amount of flavor in each bite.
  • Have fun with other ingredients. It’s also delicious with diced tomatoes and other herbs like parsley or chives.

Storage

Store any leftover watermelon salsa in an airtight container in the fridge for up to 3 days. Allow it to come to room temperature for 15 minutes before serving.

I recommend making this fresh to serve so that all of the flavors are vibrant. If you make it too far in advance, the flavors can begin to meld together a little bit too much.
