- Chop up the watermelon, jalapeno and red onion. Add in the lime juice, agave nectar, cilantro and salt and mix well.
- Serve with chips or top on chicken or fish!

- Store this in an airtight container for 3-4 days. Honestly though, we eat it in less than 24 hours!

Storage:
Store any leftover watermelon salsa in an airtight container in the fridge for up to 3 days. Allow it to come to room temperature for 15 minutes before serving.
I recommend making this fresh to serve so that all of the flavors are vibrant. If you make it too far in advance, the flavors can begin to meld together a little bit too much.
Tips:
- Don't make this too far in advance. This is best served fresh so that it can be bright and bold in flavor, rather than muddied.
- Always look for ripe watermelon. It should be heavy when picking it up, dark green skin with a bright yellow spot, and hollow when you give it a gentle knock.
- Dice the watermelon small to match the size of the onion. It's best when everything is cut the same size so you can get an equal amount of flavor in each bite.
- Have fun with other ingredients. It's also delicious with diced tomatoes and other herbs like parsley or chives.
