- Red onion: Soak the onion for 10 minutes in ice water, then drain and pat dry to remove the bite.
- Jalapeno peppers: Adds a kick of heat. Omit the seeds for a more mild salsa.
- Fresh cilantro: Fresh and vibrant to compliment the sweet and juicy watermelon.

Expert Tips
- Don’t make this too far in advance. This is best served fresh so that it can be bright and bold in flavor, rather than muddied.
- Always look for ripe watermelon. It should be heavy when picking it up, dark green skin with a bright yellow spot, and hollow when you give it a gentle knock.
- Dice the watermelon small to match the size of the onion. It’s best when everything is cut the same size so you can get an equal amount of flavor in each bite.
- Have fun with other ingredients. It’s also delicious with diced tomatoes and other herbs like parsley or chives.
What to Serve with Watermelon Salsa
There are so many options! Here are some favorites:

Storage
Store any leftover watermelon salsa in an airtight container in the fridge for up to 3 days. Allow it to come to room temperature for 15 minutes before serving.
I recommend making this fresh to serve so that all of the flavors are vibrant. If you make it too far in advance, the flavors can begin to meld together a little bit too much.
FAQs
Try adding other herbs like parsley or chives. You can even add tomatoes if you want, their pair wonderfully with watermelon.
If you let it sit for too long before eating, this is often what happens. With watermelon salsa, if the melon is super juicy, then just drain lightly on a towel before mixing.
Try adding grilled chicken, fish, shrimp, or even steak! The charred flavor goes so well with the sweet melon.
