This was always a favorite of mine to make in college. I had asked for a crockpot for Christmas and this was the first soup I made in the crockpot and it has been a favorite every since.
We’ve chatted a lot about recipe cards and I pulled out the ones I used in college for this recipe. Brings me back to those fun moments when I first moved out and just wanted my own little kitchen! (Nostalgia)

Stovetop Loaded Potato Soup
Ingredients (same as crockpot):
Instructions:
1. Sauté the aromatics & build flavor.
In a large pot or Dutch oven, melt the butter over medium heat. Add the diced onion and cook 5 minutes until softened. Stir in garlic and cook 1 minute more.
2. Add potatoes, bacon & broth.
Add the diced potatoes, parsley, cooked bacon, chicken broth, salt, and pepper. Stir well.
3. Simmer until potatoes are tender.
Bring to a boil, then reduce heat to medium-low. Cover and cook 20–25 minutes, or until potatoes are fork tender.
4. Mash to thicken.
Use a potato masher to mash about 3/4 of the potatoes directly in the pot. This naturally thickens the soup.
5. Make it creamy.
Stir in the half-and-half, shredded sharp cheddar, and sour cream. Mix until everything is melted and smooth.
6. Taste & adjust seasoning.
Add more salt, pepper, or even extra cheese if you like it richer.
7. Serve warm.
Top with extra bacon, cheddar, sour cream, or green onions.

How to Make Crockpot Loaded Potato Soup

3. Mash the potatoes.
Use a potato masher to mash about three-quarters of the potatoes. This step is what creates that thick, hearty texture while still leaving some chunks.
4. Make it creamy & cheesy.
Stir in the shredded cheddar cheese and sour cream. The heat will melt the cheese into the soup, turning it rich and velvety. Taste and adjust with more salt and pepper if needed.
Continue cooking for 30 minutes on low or 15 minutes on high to let all the flavors come together.
