Southwest Chopped Chicken Salad
Take one of my favorite salads and dressings that I shared on my blog a few years ago and turning it into a personal chopped salad. Such a great filling salad that is made in minutes and the dressing keeps in a jar for a few weeks!

Ingredients
- Cooked chicken breast, sliced (I used 1)
- 5-6 romaine leaves
- 1-2 slices tomato
- 1 slice red onion
- 1-2 slices red pepper
- 1/2 avocado
- 1/4 cup Corn & black beans
- Tortilla Salad Strips
- Salt and pepper to taste
- 1/2 C Mayo
- 1/2 C sour cream
- 1 tsp dried cilantro
- 1 chipotle pepper in adobo sauce
- 1/2 lime juice
- 1/2 tsp Worcestershire sauce
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
Instructions
- In a food processor or blender, add the Mayo, sour cream, garlic and onion powder, chipotle pepper, cilantro, lime juice and Worcestershire sauce. Blend until smooth.
- Grab your chopper and start chopping the lettuce, chicken, tomato, pepper, and avocado and leave everything in the container. Add in the tortilla strips, corn, beans and salt and pepper to taste. Top with a little dressing, toss and enjoy!
