Ingredients:
- Grilled Chicken, sliced
- 1 head Romaine lettuce or 3 romaine hearts
- 1 cup finely grated parmesan cheese
- Croutons
- Salt & pepper to taste
Lemon Ceasar Dressing
- 2 cloves garlic
- 1 cup mayo
- 2 teaspoon dijon mustard
- 1 tablespoon red wine vinegar
- 2 teaspoon Worcestershire sauce
- ½ cup shredded parmesan
- Juice of 1 lemon
- 1-2 tablespoon olive oil
- ½ teaspoon ground black pepper
Instructions
- Rinse romaine and slice into quarters lengthwise and then chop into small leaves. Discard the ends.
- Add the lettuce to a salad spinner and spin to remove excess water.
- Add the lettuce to a large bowl, add in the Parmesan cheese, salt & pepper, sliced chicken and croutons.
- For the dressing, Add all the ingredients to a blender or food processor except for the olive oil. Mix on low speed and slowly add in the olive oil a tablespoon at a time.
- Blend well and store in an air container.
Add the dressing onto the salad, give a good toss and enjoy!
