Bruschetta Baked Brie: A Decadent Appetizer

Ingredients

  • 1 cup cherry tomatoes, diced
  • handful fresh basil, chopped roughly
  • 1 Tbsp extra virgin olive oil
  • 1 Tbsp balsamic vinegar
  • 1 clove garlic, minced (about 1 TSP)
  • ⅛ teaspoon salt
  • 8 oz wheel of brie

Instructions

  1. Preheat oven to 400 degrees.


2. In a medium bowl add tomatoes, basil, garlic, olive oil, vinegar, and salt. Stir until combine. Place in fridge until ready to use.


3. Oil a baking dish, unwrap the brie wheel and place in the center of the dish. Bake for 15 minutes then remove.

4. Allow to cool for 5 minutes. Spoon the bruschetta topping onto the center of the brie. Spread over the top. Serve immediately with scoopers such as a sliced toasted baguette, crackers, or veggies!

Tips and Variations

  • Cheese Options: If you’re not a fan of brie, you can substitute it with camembert for a similar creamy texture.
  • Herb Variations: Try adding fresh oregano or thyme to the bruschetta mix for an extra herbaceous note.
