Grilled Steak Chopped Salad
Do you find yourself eating less in the summer months because of the heat?? Or is it just me? I tend to eat lighter in the summer months, especially on hot days and crave chopped salads all day everyday. I’m pairing my go to chopped salad with some grilled steak!

Ingredients
- 1 piece of steak, your choice of cut
- lettuce (I use a spring mix), give a rough chop
- 1 avocado, diced
- 1/2 cup cooked corn
- 1/2 cup fresh diced tomato
- 1/4 cup Gorgonzola cheese
- 1/2 cup red onion, diced
- olive oil
- favorite steak seasoning
- your choice dressing
- 1/2 cup cucumber, diced
Instructions
- Earlier in the day, marinate your steak! Place in a container or ziploc bag and drizzle olive oil and your favorite seasonings. Allow to marinate for 4 hours and take out of the fridge 30 minutes before grilling.
- When you are ready to make dinner, spray your grill, heat it to low/ medium heat and let heat to 400 degrees. Place the steak on the grill and cook 5 minutes, flip and cook another 5. Some cuts of steak that are thick, take a little longer, so check the middle and adjust cooking times to your liking.
- While steak is cooking, let’s prep the salad! In a large bowl add the chopped salad, corn, onion, avocado, tomato, cucumber and cheese.
- Bring the steak in, allow to rest for 5 minutes and then slice. Place on top of salad and serve with your favorite dressing.
