- 1 piece of steak, your choice of cut
- lettuce (I use a spring mix), give a rough chop
- 1 avocado, diced
- 1/2 C cooked corn
- 1/2 C fresh diced tomato
- 1/4 C gorgonzola cheese
- 1/2 C red onion, diced
- olive oil
- favorite steak seasoning
- your choice of dressing
- 1/2 C cucumber, diced
Earlier in the day, marinate your steak! Place in a container or ziploc bag and drizzle olive oil and your favorite seasonings. Allow to marinate for 4 hours and take out of the fridge 30 minutes before grilling.2. When you are ready to make dinner, spray your grill, heat it to low/ medium heat and let heat to 400 degrees. Place the steak on the grill and cook 5 minutes, flip and cook another 5. Some cuts of steak that are thick, take a little longer, so check the middle and adjust cooking times to your liking.3. While steak is cooking, let’s prep the salad! In a large bowl add the chopped salad, corn, onion, avocado, tomato, cucumber and cheese.4. Bring the steak in, allow to rest for 5 minutes and then slice. Place on top of salad and serve with your favorite dressing. 5. Enjoy!
