Easy Beef Stir Fry
I have been craving stir fry here lately in my pregnancy and had to make it the other day. An easy meal with an easy stir fry sauce that’s ready in under 30 minutes!

Ingredients
- 1 pound skirt steak
- 2 cups frozen or fresh mixed stir fry veggies
- 1 cup beef broth
- 3 Tablespoons brown sugar
- 1/4 cup low sodium soy sauce
- 2 teaspoons corn starch
- 2 Tablespoons minced garlic
- salt & pepper
Instructions
- Cut your steak into thin slices. In a pan drizzle some oil and add the minced garlic and steak. Season with salt and pepper and cook 2 min on each side.
- Add in the veggies, toss well and place a lid on top and let cook on low hear for 7-10 minutes. While cooking, in a measuring cup add the beef broth, brown sugar, soy sauce and corn starch and whisk.
- Pour the sauce mixture over the veggies and steak and let simmer until thick, about 7-10 minutes.
- Serve immediately with rice, quinoa or noodles!
