If you’re a fan of the classic Caesar salad but are looking to shake things up, a Lemon Caesar Salad with Lemon Caesar Dressing might just be what you need. This twist on the traditional recipe introduces a bright and zesty flavor profile that makes it perfect for summer gatherings or as a refreshing side dish to your favorite main course. Let’s dive into the details of this delightful salad and its tangy dressing.

Ingredients:

  • Grilled Chicken, sliced
  • 1 head Romaine lettuce or 3 romaine hearts
  • 1 cup finely grated parmesan cheese
  • Croutons
  • Salt & pepper to taste

Lemon Ceasar Dressing

  • 2 cloves garlic
  • 1 cup mayo
  • 2 teaspoon dijon mustard
  • 1 tablespoon red wine vinegar
  • 2 teaspoon Worcestershire sauce
  • ½ cup shredded parmesan
  • Juice of 1 lemon
  • 1-2 tablespoon olive oil
  • ½ teaspoon ground black pepper

Instructions

  • Rinse romaine and slice into quarters lengthwise and then chop into small leaves. Discard the ends.
  • Add the lettuce to a salad spinner and spin to remove excess water.
  • Add the lettuce to a large bowl, add in the Parmesan cheese, salt & pepper, sliced chicken and croutons.
  • For the dressing, Add all the ingredients to a blender or food processor except for the olive oil. Mix on low speed and slowly add in the olive oil a tablespoon at a time.
  • Blend well and store in an air container.

Add the dressing onto the salad, give a good toss and enjoy!

Tips and Variations

Homemade Croutons: Make your own croutons by tossing cubed bread with olive oil, garlic powder, and a pinch of salt, then baking until golden and crispy.

Grilled Chicken: Add grilled chicken breast slices to turn this salad into a hearty meal.

Extra Zest: For an added lemon kick, sprinkle a bit more lemon zest over the top just before serving.
