Lemon Caesar Salad

Ingredients
  

  • Grilled Chicken sliced
  • 1 head Romaine lettuce or 3 romaine hearts
  • 1 cup finely grated parmesan cheese
  • Croutons
  • Salt & pepper to taste
  • Lemon Caesar Dressing:
  • 2 cloves garlic
  • 1 cup mayo
  • 2 teaspoon Dijon mustard
  • 1 tablespoon red wine vinegar
  • 2 teaspoon Worcestershire sauce
  • ½ cup shredded parmesan
  • Juice of 1 lemon
  • 1-2 tablespoon olive oil
  • ½ teaspoon ground black pepper

Method
 

  1. Rinse romaine and slice into quarters lengthwise and then chop into small leaves. Discard the ends.
  2. Add the lettuce to a salad spinner and spin to remove excess water.
  3. Add the lettuce to a large bowl, add in the Parmesan cheese, salt & pepper, sliced chicken and croutons.
  4. For the dressing, Add all the ingredients to a blender or food processor except for the olive oil. Mix on low speed and slowly add in the olive oil a tablespoon at a time. Blend well and store in an air container.
  5. Add the dressing onto the salad, give a good toss and enjoy!
