Philly Cheesesteak Loaded Baked Potato

These loaded potatoes are UNREAL! ! I love a good Philly cheesesteak, and this is a unique take on it! Kids will love the option too! This could be served at a dinner gathering or on a weeknight at home! Let me know if you try it!

In the notes sections I’ve also included my homemade cheese sauce but any cheese sauce works!

Cook Time 20 minutes
Total Time 1 hour 20 minutes

Ingredients

  • 4 baking potatoes, such as Idaho or russet, scrubbed clean
  • 1 T olive oil, plus more for coating the potatoes
  • 2 tsp Worcestershire sauce
  • 1 tsp minced garlic
  • 1/2 tsp garlic salt
  • 1 1/2 pounds skirt steak, thinly sliced
  • Salt and freshly ground black pepper
  • 1 1/2 cups thinly sliced onion, mushrooms and peppers (or use whatever you prefer!)
  • 1 cup cheddar cheese sauce (or use 1 1/2 cup shredded cheese)

Instructions

    1. Preheat the oven to 400 degrees.

    2. Poke the potatoes with a fork and rub the potatoes all over with the olive oil and place them in the oven.

    3. Bake for 50 to 60 minutes, until the potatoes are tender when you squeeze them gently.

    4. Remove the potatoes from the oven and set aside. Reduce the oven temperature to 350 degrees.

    5. Meanwhile, in a pan, add olive oil, once hot, add the steak Worcestershire sauce, garlic salt, and salt and pepper. Cook for 3 to 4 minutes per side for medium-rare, or slightly longer for more fully cooked meat.

    6. Remove the steak from the pan. Add minced garlic, onions, peppers and mushrooms (or whatever you plan to use) and sauté.

    7. Let cook down and season with salt and pepper.

    8. Using a sharp knife, cut the top of each potato lengthwise and scoop out the inside and add to a bowl. Make sure to leave a small amount of potato around the edges so your potato doesn’t fall apart.

    9. Add the steak and potato filling to the veggies. If you using a cheddar sauce add 3/4 cup and mix well. If using shredded cheese, add 1 cup and let melt.

    10. Stuff the potatoes with the mixture and transfer the potatoes to the oven and bake for 5 minutes.

    11. Once they’re done, top with more cheese sauce or shredded cheese (if using shredded cheese, broil for a minute!)

Notes

Homemade Cheese Sauce

2 cups cheddar cheese (shred it yourself!)

2 T cornstarch

2 cans evaporated milk

Salt and pepper to taste

Whisk the evaporated milk and cornstarch together. Pour into a pot and add in your cheese, salt and pepper. Cook on low, stirring occasionally until nice and melted!
