Crockpot Chicken & Broccoli

Crockpot Chicken & Broccoli

Need an easy meal that you can just dump everything into the crockpot and go about your day?! This is the one friend! Just a classic casserole that’s made in the crockpot and done in a few hours while you get other things done!

Let’s get started!

Prep Time 5 minutes
Cook Time 5 hours
Total Time 5 hours 5 minutes

Ingredients

  • 1 cup white rice uncooked
  • 1 small yellow onion peeled and chopped
  • 2 cloves garlic minced
  • 1 teaspoon dried parsley
  • 2 1/2 cups chicken broth
  • 3 large boneless skinless chicken breast or thighs
  • 2 cups broccoli florets, steamed or thawed
  • 1/2 cup sour cream
  • 1 cup cheddar cheese shredded
  • 1 can cream of chicken soup
  • 1 tsp onion salt
  • Salt and pepper to taste
  • 2 T minced garlic

Instructions

    1. To a slow cooker, add rice, onion, garlic, onion salt and dried parsley. Pour chicken broth over rice. Season chicken all over with salt and pepper onion. Place in the slow cooker on top of rice. Cover and cook on HIGH for 2 hours or on LOW for 5-6 hours.
    2. Uncover the slow cooker and shred the chicken and toss in the broccoli.
    3. Mix the sour cream and cream of chicken together and pour into crockpot and gently mix. Mix in the cheese and cook on low another 30 minutes. Optional! Add in some buttered bread crumbs on top!
