Ok, I waited a year to make this latte…. I was slightly nervous with how it would turn out and the level of difficulty… BUT! It was easy peasy! What made it easier was finding roasted chestnuts at Trader Joe’s. That really does cut out most of the work.
I have seen roasted chestnuts at Walmart too! If you need to roast them yourself, crack the shell and roast at 350 for 30-40 minutes on a sheet pan. The shell should pop up, and the meat should be tender.

- Start by making your chestnut simple syrup. You’ll want 1 1/4 cup water, 3/4 cup sugar (or a few drops of stevia for a sugar free option) 1 T vanilla extract, 6-7 cooks chestnuts, roughly chopped.2. Simmer your syrup, let cool and strain into a container. It will keep in the fridge for up to 3-4 weeks in an airtight container.3. Let’s make the latte! Add milk to a small pot with 2-3 T of the simple syrup (you could honestly go more if you’d like!) let it heat thoroughly but not boil!4. In a mug, add in your coffee. Get your praline topping together, chop up some pecans to a fine chop and mix with brown sugar.5. Froth the milk mixture, add the milk to your mug. Top with whipped cream and the praline mix.6. Enjoy!
