Rinse romaine and slice into quarters lengthwise and then chop into small leaves. Discard the ends.
Add the lettuce to a salad spinner and spin to remove excess water.
Add the lettuce to a large bowl, add in the Parmesan cheese, salt & pepper, sliced chicken and croutons.
For the dressing, Add all the ingredients to a blender or food processor except for the olive oil. Mix on low speed and slowly add in the olive oil a tablespoon at a time. Blend well and store in an air container.
