Soup season has begun and I celebrated the first day of fall with some yummy loaded enchilada soup! It’s easy, it’s packed with flavor and you can make it either chicken or beef!

- Start but adding the ground beef or chicken to a pot with the onion, pepper and taco seasoning. Let simmer until cooked. Add in the remainder ingredients.2. Let simmer for 20 minutes on low. Serve immediately with all the fixings! Cheese, tortilla strips, sour cream and avocado!3. Enjoy!
