Loaded Enchilada Soup

Ingredients
  

  • 1 lb. ground beef (or you can use chopped chicken)
  • 4 C beef broth (or chicken broth)
  • 2 cans red enchilada sauce
  • 1 can black beans, drained
  • 1 C corn
  • 1 small can green chilies
  • 1/2 onion, diced
  • 1 red pepper diced
  • 3 T taco seasonings
  • 1 can diced tomatoes

Method
 

  1. Start but adding the ground beef or chicken to a pot with the onion, pepper and taco seasoning. Let simmer until cooked. Add in the remainder ingredients.
    2. Let simmer for 20 minutes on low. Serve immediately with all the fixings! Cheese, tortilla strips, sour cream and avocado!
    3. Enjoy!
