Pickle Hummus

Ingredients
  

  • 1/2 cup chopped dill pickle
  • 1/3 cup chilled pickle juice
  • 1/4 cup tahini
  • 1/4 cup olive oil
  • 3 4 large cloves garlic
  • 1 2 tsp salt
  • 1 2 tsp dried dill
  • 1/2 tsp pepper
  • 1/4 tsp ground cumin
  • 2 15 oz cans chickpeas rinsed and drained (reserve 3 Tbsp of the chickpea water)

Method
 

  1. Add all ingredients to a food processor or blender except for the olive oil. Blend and slowly pour in the olive oil. Blend until smooth.
  2. Place in a bowl and top with chopped pickles and some red pepper flakes or cayenne and a drizzle of olive oil.
