Pickle Hummus

Three summers ago, I found pickle hummus at Trader Joe’s and it has been an obsession ever since then. It is a seasonal hummus for Trader Joe’s, and I have never seen it again however I have seen other brands at Walmart, but I started making an at home version that I absolutely love.

I love hummus, not only as a snack, but adding it to wraps as well! Did you also know that you can freeze hummus? If you’ve made a big batch that you were not gonna get through you can freeze it in an airtight container for up to four months!

Let’s get started!

I love hummus, not only as a snack, but adding it to wraps as well! Did you also know that you can freeze hummus? If you’ve made a big batch that you were not gonna get through you can freeze it in an airtight container for up to four months!

Let’s get started!

Ingredients:

  • 1/2 cup chopped dill pickle
  • 1/3 cup chilled pickle juice
  • 1/4 cup tahini
  • 1/4 cup olive oil
  • 3 – 4 large cloves garlic
  • 1 – 2 tsp salt
  • 1 – 2 tsp dried dill
  • 1/2 tsp pepper
  • 1/4 tsp ground cumin
  • 2 15 oz cans chickpeas, rinsed and drained (reserve 3 Tbsp of the chickpea water)

Instructions:

  1. Add all ingredients to a food processor or blender except for the olive oil. Blend and slowly pour in the olive oil. Blend until smooth.
  2. Place in a bowl and top with chopped pickles and some red pepper flakes or cayenne and a drizzle of olive oil.

I have to share with you one of my favorite finds ever – This Amazon Chopper!! It is easily one of my most used kitchen utensils and makes chopping items so quick.

I had only moved there 3 months prior to start over and really find myself.
