Pickle Guacamole

This easy and delicious Pickle Guacamole is a tangy twist on classic guacamole that's packed with zesty flavor. It comes together fast, so it's perfect for entertaining or any occasion.

Ingredients
  

  • 3 avocados pitted and mashed
  • 1/2 jalapeno diced
  • 2 tbsp. pickle juice
  • 1/2 c. diced pickles plus more for garnish
  • 1/4 red onion finely chopped
  • 1 tbsp. chopped cilantro plus more for garnish
  • Corn chips for serving

Method
 

  1. Combine all ingredients minus the chips and mash together.
  2. Let chill in the fridge for an hour, then serve with chips!
    Storage:
    Store leftovers in an airtight container with plastic wrap pressed directly on top of the surface to prevent any oxidation. This will keep in the fridge for 1-2 days, but the faster it's enjoyed, the fresher, and greener it will stay.Make this 1-2 days ahead of time: Mix together, then transfer to an airtight container — we suggest squeezing fresh lime juice right over the top, then pressing plastic wrap on the surface to remove any air pockets. Enjoy straight from the fridge after giving it a quick stir to refresh.
