Leftover Turkey Chili

This one-pot Turkey Chili with leftover turkey is hearty, comforting, and packed with cozy flavors. It's the perfect way to turn holiday leftovers into a flavorful family dinner on busy weeknights or chilly weekends.

Ingredients
  

  • 2 cups cooked shredded turkey
  • 2 cans light kidney beans drained
  • 1 can fire roasted tomatoes
  • 1 can diced tomatoes
  • 1 small can diced green chilies
  • 2 cups beef or chicken broth
  • 3 teaspoons chili seasonings
  • Salt & pepper to taste

Method
 

  1. In a large pot add in all of the ingredients and stir well. Let simmer for 45 minutes. 
    2. Serve with your favorite toppings!
    3. Enjoy!

Notes

Storage:
  • Store leftovers in an airtight container in the fridge for up to 4 days. Reheat on the stovetop over medium-low with an extra splash of broth, if needed to thin it out slightly. Serve once hot.
  • Freeze cooled leftovers in an airtight container for up to 3 months. Thaw in the fridge overnight before reheating on the stovetop as instructed above and serving again.
