Watermelon Salsa
I've been on a salsa kick lately and loving sharing different variations with you! My strawberry jalapeno salsa is one of my most popular recipes and I thought we would switch it up with watermelon this time! The flavor is UNREAL! Just imagine grilling some fresh fish or chicken and topping it with this, this summer. You're welcome....

Ingredients
- 2 cups seedless watermelon, diced
- 1/2 red onion. diced
- 1-2 jalapeno peppers, diced
- 1/4 cup fresh cilantro, chopped
- juice of one lime
- 2 tsp agave nectar
- 1/2 tsp salt
Instructions
- Chop up the watermelon, jalapeno and red onion. Add in the lime juice, agave nectar, cilantro and salt and mix well.
- Serve with chips or top on chicken or fish!

Notes
Store this in an airtight container for 3-4 days. Honestly though, we eat it in less than 24 hours!
