Skillet Chicken Pot Pie
Chicken pot pie is a staple in this house in the fall. I love the various ways you can make it too! Flaky crust version or thick noodles, just give me all the yummy goodness! This one skillet recipe is easy!

Ingredients
- 4 tablespoons butter
- ½ cup onion, diced
- 2 cups frozen veggies
- 2 potatoes, diced
- ¼ cup flour
- 1 cup heavy whipping cream
- 1 ½ cup milk
- ½ teaspoon salt, pepper, dried thyme, poultry seasoning
- 1 clove garlic, minced
- 3 cups diced cooked chicken
- 1 prepared pie crust
- 1 egg, beaten
- 1/4 c chicken broth
Instructions
- Preheat oven to 400. In an oven safe skillet, melt the butter over medium heat then add onion, garlic, potatoes and frozen veggies - saute 10 minutes.
- Sprinkle the flour on top and stir till combined well. Slowly whisk in the cream, chicken broth and milk. Add the seasonings - salt, pepper, thyme and poultry.
- Stir in the chicken. Roll out the pie crust and place on top of mixture.
- Brush with a beaten egg, cut some slits in the dough and bake for about 25-30 minutes until golden brown.

- Remove from oven and let cool to desired temperature.
