Skillet Chicken Pot Pie

Ingredients
  

  • 4 Tbsp butter
  • 1/2 C onion, diced
  • 2 C frozen veggies
  • 2 potatoes, diced
  • 1/4 C flour
  • 1 C heavy whipping cream
  • 1 1/2 C milk
  • 1/2 tsp salt, pepper, dried thyme, poultry seasoning
  • 1 clove garlic, minced
  • 3 C diced cooked chicken
  • 1 prepared pie crust
  • 1 egg, beaten
  • 1/4 C chicken broth

Method
 

  1. Preheat oven to 400. In an oven safe skillet, melt the butter over medium heat then add onion, garlic, potatoes and frozen veggies - sauté 10 minutes.
    2. Sprinkle the flour on top and stir till combined well. Slowly whisk in the cream, chicken broth and milk. Add the seasonings - salt, pepper, thyme and poultry.
    3. Stir in the chicken. Roll out the pie crust and place on top of mixture.
    4. Brush with a beaten egg, cut some slits in the dough and bake for about 25-30 minutes until golden brown.
    5. Remove from oven and let cool to desired temperature.
    6. Enjoy!
