One Pot Chicken Parmesan
I love one pot meals! Easy to make and an easy clean up! Chicken Parmesan is a favorite around here and I needed a quick meal that didn’t take a lot of prep time. Bring on the one pot!

Ingredients
- 2 Chicken Breasts, cut into chunks
- 1 box penne noodles
- 2 cups pasta sauce
- 1 cup ricotta
- 1 cup cottage cheese
- 2 cups mozzarella cheese
- 1 Tablespoon Italian seasonings
- 1 Tablespoon garlic salt
- Salt & Pepper to taste
Instructions
- Season the chicken breast with salt and pepper and place in an oven safe pot. Cook until no longer pink, take out and cut the chicken up and set aside.
- Rinse pot out and fill with water. Let water boil and add in noodles. Cook until al dente and drain.
- Preheat oven to 350. Add noodles back into pot, add in ricotta, cottage cheese, chicken, sauce and 1 cup of cheese and mix well. Top with remaining cheese. Place in oven and bake 25 minutes.
- Broil for the last minute, take out and serve with crusty bread!
Notes
If you do not have an oven safe pot, make as directed and add to a casserole dish and bake!
