Mexican Street Corn Dip
I love Mexican Street Corn! The flavors are just SO GOOD! I have turned my favorite side dish into a dip for summer bbqs and parties! It does not disappoint and is so easy to make!

Ingredients
- 2 cups of corn
- 1/4 cup sour cream
- 1/4 cup mayo
- 4 oz cream cheese
- can diced green chilies or jalapeños
- 1/2 cup cotija
- Fresh cilantro
- 1 tsp cumin
- 1 tsp chili powder
- salt & pepper to taste
- 2 cloves garlic
- 2 tablespoons butter
Instructions
- In a skillet add the butter, garlic and corn and cook for 8 minutes. Add in the green chilies or jalapeños, spices, sour cream, cream cheese and mayo and mix well.
- Mix in 1/4 cup cotija, place mixture in an oven safe dish, then sprinkle the remaining 1/4 cup on top. Broil for 3-4 minutes on high. Take out and sprinkle chopped cilantro on top.
- Serve immediately with tortilla chips!
*** you could also do this in a crockpot and keep on warm/ low setting!
