Loaded Enchilada Soup
Soup season has begun and I celebrated the first day of fall with some yummy loaded enchilada soup! It’s easy, it’s packed with flavor and you can make it either chicken or beef!

Ingredients
- 1 lb ground beef (or you can use chopped chicken)
- 4 cups beef broth (or chicken broth)
- 2 cans red enchilada sauce
- 1 can diced tomatoes
- 1 can black beans, drained
- 1 cup corn
- 1 small can green chilies
- 1/2 onion, diced
- 1 red pepper diced
- 3 T taco seasoning
Instructions
- Start but adding the ground beef or chicken to a pot with the onion, pepper and taco seasoning. Let simmer until cooked. Add in the remainder ingredients.

- Let simmer for 20 minutes on low. Serve immediately with all the fixins! Cheese, tortilla strips, sour cream and avocado!
