To make Dill Pickle Chicken Salad, you’ll need the following ingredients:

  • 3 cups shredded or chopped cooked chicken 
  • 1/2 Tbsp fresh chopped dill
  • 1/3 cup finely chopped red onion
  • 1/2 cup mayonnaise or plain Greek yogurt
  • 3/4 cup diced dill pickles
  • 4 tsp dill pickle juice
  • 1 tsp dijon mustard
  • 1 1/4 tsp kosher or sea salt
  • 1/2 tsp ground pepper
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder

Instructions

  1. Shred your chicken or chop up to your liking.
  2. In a large bowl combine the chicken, fresh chopped dill, chopped red onion, mayonnaise or plain Greek yogurt, salt, pepper, chopped dill pickles, pickle juice, dijon mustard, onion powder and garlic powder. Mix everything together until fully combined.

  3. Store in the fridge in an airtight container for at least 1 hour.
  4. Serve or keep in the fridge. I love to eat this with crackers or on a croissant.
