Creamy Sausage Tortellini Soup

This soup is one of our favorites! It is so delicious after a long day outside or cozied up inside! Leftovers are also SO good!

Creamy Sausage and Tortellini Soup

Ingredients Method

Ingredients
  

  • 1 lb Italian sausage
  • 1/2 chopped medium white onion
  • 2 medium carrots sliced or chopped
  • 2 sticks celery chopped finely
  • 4 cloves minced garlic
  • 1 28 fl oz can crushed tomatoes
  • 1 14 fl oz canned diced tomatoes with juice
  • 4 cups chicken broth
  • 2 9oz packages refrigerated cheese tortellini
  • 3/4 cup heavy whipping cream optional
  • 2 cups packed fresh baby spinach
  • Salt and pepper to taste

Method
 

  1. Add the sausage and chopped onion to a skillet and saute for about 7 minutes
  2. Add the garlic in towards the end so it doesn’t burn
  3. Add the sausage mixture to your Crockpot
  4. Meanwhile, chop your carrots an celery
  5. Add all ingredients EXCEPT the tortellini, spinach, cream, and salt and pepper to the Crockpot.
  6. Cook on high for 3-4 hours or low 6-7 hours
  7. About 30 minutes prior to serving- add in your cheese tortellini, cream and spinach – TIP: I set the heat to HIGH for these last 30 minutes
  8. Give it a stir occasionally throughout the cook
  9. Season with salt and pepper as needed prior to serving
