Chicken Tender Chopped Salad
On this weeks salad series I had some left over chicken tenders from Tucker’s lunch and you guessed it, I put those right on the chopper and chopped them up along with other salad favorites to create a great chopped salad.
When I tell you how good the mustard vinegarette was… it will definitely be a good one in my salad rotation!
As always, all of these chopped salads can be made in bigger batches for gatherings! I can’t wait to hear what you think of this one!

Ingredients
- Cooked chicken tenders (I used 2)
- 5-6 romaine leaves
- 1-2 slices tomato
- 1 slice red onion
- 1-2 slices red pepper
- 4 slices cucumber
- Blue cheese crumble
- Sunflower seeds
- Salt and pepper to taste
- 2 tsp red wine vinegar
- 1 Tbsp Dijon mustard
- 3 Tbsp olive oil
- 1 tsp minced garlic
Instructions
- Grab your chopper and start chopping each ingredient (easy right?!) leave everything in the container. Once chopped, add in the blue cheese, sunflower seeds and salt and pepper to taste set aside and grab a small bowl.
- In the bowl, add your red wine vinegar, olive oil, minced garlic and mustard. Mix well and then add salt and pepper to taste. Pour over salad and toss to combine.
- Enjoy!
