How To Make Pancake Breakfast Bake
1. First, cook 1 lb of breakfast sausage and 1 lb of bacon. Make sure that the sausage is ground up well, drain the grease from both and chop up the bacon.
2. In a large bowl mix together 4 cups of just add water Pancake Mix with water following the directions on the box of your pancake mix. I love the krusteaz pancake mix!
3. Add the shredded cheese, bacon, sausage, and maple syrup. You could reserve some of the cheese, bacon, and sausage to add to the top. Stir well.

4. Spray a 9×13 baking dish with cooking spray. Add the pancake mixture to the baking dish. Top with the reserved cheese, bacon, and sausage. Bake at 375° for about 35-40 minutes or until a toothpick comes out clean from the center of the pancake casserole.

5. Take out of the oven, cut into squares and serve with additional syrup and butter!

Expert Tips
- Drain Meat Well: Once the bacon and sausage are cooked, drain them well to get rid of any excess grease.
- Don’t Overmix: No need to stir and stir the pancake mix until it’s a perfectly smooth batter. Overmixing will cause a dense, heavy casserole. Mixing until it’s just combined will give you the light, airy texture you want.
- Avoid Over-Baking: Check the casserole once it’s been in the oven for 35 minutes. If it’s golden on top, an inserted toothpick comes out clean and the edges are pulling away from the pan, it’s done!
- Let Casserole Rest: Let it sit for 5–10 minutes after removing from the oven, and before slicing. This will help the casserole set so it won’t fall apart when you cut into it.
- Use a Metal Pan: For extra crispy edges, use a metal pan instead of an enameled cast iron baking dish. They hold heat well and will give you super crispy bits on the sides.
Variations
- Switch Up The Meat: Try turkey sausage instead of traditional pork sausage for a slightly lighter casserole.
- Change The Cheese: Use pepper jack instead of cheddar for a little extra kick.
- Add Heat: Throw in some diced jalapeños if you like it spicy!
- Extra Veggies: Stir in green onions, bell peppers or onions for more flavor.
- Drizzle with Hot Honey: Try this instead of syrup for some kicked-up sweetness.
Storage
You can make this casserole ahead of time for a time-saving breakfast. Assemble it the night before, then cover and refrigerate. When you’re ready to serve the next morning, bring it to room temperature while you pre-heat the oven. Bake and enjoy!
Store any leftovers in an airtight container in the fridge for up to 4 days. Reheat in the oven at 350° until warmed through, about 15 minutes. Or if you’re reheating individual slices, warm in the microwave in 30 second intervals.
You can freeze leftovers, too. For an easy at-the-ready breakfast, portion the casserole into squares or slices, then store wrapped, or in an airtight container in the freezer for up to 2 months. Thaw in the fridge the night before enjoying, and reheat in the oven or microwave until warm.

FAQs
Absolutely. If you have homemade batter on hand, it works perfectly in this casserole. The store-bought mixes are convenient, but if you want to go homemade, that’s great too.
Sure. If you want a slightly sweeter casserole, increase the amount of syrup you use, or simply serve extra on the side. Drizzle on a generous amount, or dip each bite, as if you were topping pancakes – it’s a personal preference! You can also add a light dusting of powdered sugar for presentation and extra sweetness.
When the top is golden brown, the edges are starting to pull away from the sides of the pan, and an inserted toothpick or knife in the center comes out clean, that’s when the casserole is ready to serve.
Of course. This casserole is extremely customizable. Skip the cheese if you’d like!
