During the school week my mom always had some sort of crockpot meal going. Usually, it was a roast or chicken, and it smelled so good walking into the house.
I love a good chuck roast and the secret to keeping it tender and juicy is searing it first before adding to the crockpot. Searing it will help lock in the juices. Adding a packet of the French onion soup mix just makes it complete!

- Start by searing your roast 4 minutes on each side and seasoning with salt and pepper. Searing helps to lock in the juices.
- Take your diced potatoes and carrots and place at the bottom of your crockpot. Sprinkle with a 1/4 of the French onion mix. Place the chuck roast on top, sprinkle remaining soup mix and then add in water.
- Cook on low heat 8-10 hours. Once cooked, pull apart your roast with a fork. If you'd like to make a gravy, remove the beef and vegetable and mix in 2T corn starch with 2T water.Enjoy!
