Creamy Sausage and Tortellini Soup
This soup is one of our favorites! It is so delicious after a long day outside or cozied up inside! Leftovers are also SO good!

Ingredients
- 1 lb Italian sausage
- 1/2 chopped medium white onion
- 2 medium carrots sliced or chopped
- 2 sticks celery chopped finely
- 4 cloves minced garlic
- 1 (28 fl oz) can crushed tomatoes
- 1 (14 fl oz) canned diced tomatoes with juice
- 4 cups chicken broth
- 2 (9oz) packages refrigerated cheese tortellini
- 3/4 cup heavy whipping cream (optional)
- 2 cups packed fresh baby spinach
- Salt and pepper to taste
Instructions
- Add the sausage and chopped onion to a skillet and saute for about 7 minutes
- Add the garlic in towards the end so it doesn't burn
- Add the sausage mixture to your Crockpot
- Meanwhile, chop your carrots an celery
- Add all ingredients EXCEPT the tortellini, spinach, cream, and salt and pepper to the Crockpot.
- Cook on high for 3-4 hours or low 6-7 hours
- About 30 minutes prior to serving- add in your cheese tortellini, cream and spinach - TIP: I set the heat to HIGH for these last 30 minutes
- Give it a stir occasionally throughout the cook
- Season with salt and pepper as needed prior to serving
