Sassy BLT Chopped Salad
I’m taking my Sassy BLT recipe and turning it into a chopped salad version… so what makes it so different? The marinade that I use in the tomatoes and Mayo I’m turning into a dressing and let me tell you…. IT IS SO GOOD!

Ingredients
- 1 head of romaine, finely chopped
- 1 cup mixed greens, finely chopped
- 1 large tomato, diced small
- 1 avocado, diced
- 5 pieces of cooked bacon, diced
- 1/2 cucumber, diced
- 1/2 cup crumbled feta
- sunflower seeds
- cracked black pepper
- 1/2 tsp Italian herbs
- 1/4 cup olive oil
- 2 T red wine vinegar
- 1/2 cup Mayo
- 1/4 tsp salt
- 1/2 cup small cooked pasta
Instructions
- In a bowl, combine the lettuce, tomato, avocado, bacon, feta, cooked pasta, sunflower seeds and pepper and toss.
- In a mason jar or bowl, mix together the Mayo, olive oil, Italian herbs, salt and red wine vinegar. Whisk together until it is incorporated well. You might have to adjust some of the ingredients, if it’s too thick, add a touch more olive oil.
- Pour over top of salad, mix thoroughly and serve!
