Roasted Corn Salsa
This salsa can be made in 20 minutes. You’re probably thinking, how is this ready in 20 minutes?! Maybe I should explain myself… it’s because of that dang chopper I bought! It cuts down on all of my time to get everything done! If you’re cutting everything up by hand then account for a little extra time!
It’s so fresh and good. We love to add to to our taco salads!

Ingredients
- 1 ½ cups roasted corn (or canned/ fresh)
- 1/2 C red onion, diced
- 1 C tomato, diced
- 1 14.5 oz can black beans
- 1/2 C bell pepper, diced
- 3/4 C cucumber, diced
- 1 avocado, diced
- 2 T lime juice
- 1/3 C olive oil
- 2 T honey or agave nectar
- 2 T minced garlic
- 1/2 tsp onion powder
- 1/2 tsp cumin
- Salt & pepper to taste
- fresh cilantro, chopped
Instructions
- in a large bowl, add everything but the avocado, lime juice, agave, olive oil and garlic.
- In a separate bowl add the olive oil, lime juice, agave, garlic and seasonings. Mix well and pour over top. Let chill in the fridge. Right before serving, add in the avocado.

Notes
I buy roasted corn frozen from Trader Joe’s and find it at whole foods or Kroger’s! Or you could girl some fresh corn and cut it off the cob!
