Let's just say, on a cold winter morning, this hot baked oatmeal with some syrup and honey yogurt on top hits the spot!
It's heart healthy and the perfect make ahead breakfast for those mornings when you're running just a tad behind for work and need a little pick me up. It's even great to meal prep and put into portion containers and freeze! Enjoy this recipe friends!

Ingredients
2 eggs
1/3 cup brown sugar
1 tablespoon vanilla extract
2 teaspoons cinnamon
2 teaspoons chia seeds
1/2 teaspoon salt
2 teaspoons baking powder
3 cups old fashioned oats
1 cup milk
1 cup fresh or frozen blueberries
Instructions
Preheat oven to 350°F. Spray an 11x7 or a 9x13 pan with nonstick cooking spray.
Whisk eggs, chia seeds, brown sugar, and vanilla until smooth. Stir in cinnamon, salt, and baking powder. Stir in oats and milk. Gently fold in blueberries. Spread in prepared pan.
Bake for 25-30 minutes until oatmeal is browned and center is cooked through. Cool slightly before serving. Serve with syrup and/or fruit or vanilla yogurt.
Store in refrigerator up to 2 days. You can also portion and freeze for quick morning breakfasts!
