Hearty Sausage, Potato & Kale Soup
Confession- I’ve never had the Zuppa Tuscana from Olive Garden but I’ve been told this soup is basically it! I’m down for anything Olive Garden so if you like that soup you’ll enjoy this!
“Souper” easy (see what I did there) and very hearty!

Ingredients
- 1 lb ground sausage
- 4 potatoes, peeled and diced
- 1/2 onion, diced
- 4 cups chicken broth
- 1 cup kale
- 2 T flour
- salt & pepper to taste
- 1 cup heavy cream
- 2 cloves garlic, minced
Instructions
- Start by cooking your sausage, garlic and onion together. Once sausage is cooked add in flour. Slowly pour in the chicken broth.
- Add in the potatoes and let simmer on low for 35 minutes or until potatoes are soft.
- Add in cream and kale and stir. Simmer until kale is wilted.
- Serve immediately with some crust bread!
