White Chicken Chili

Ingredients
  

  • 2 chicken breasts cooked and shredded
  • 3 cans northern beans drained
  • 3 cups chicken broth
  • 1/2 onion diced
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • salt & pepper to taste
  • 1 small can green chilies
  • 1/2 block cream cheese
  • 1/2 cup sour cream
  • 1 tablespoon olive oil
  • 1 cup corn fresh or frozen

Method
 

  1. Get your chicken breasts cooked and shredded and set to the side. In a pot add in the onion with the olive oil and let cook for 5 minutes. Next add in the beans, broth, corn, chilies and all of the spices.
  2. Let simmer for 10 minutes. Add in the chicken and let simmer for another 5 minutes. Stir in the sour cream and cream cheese and let melt.
  3. Once melted, serve hot with crusty bread.
