Week Long Tex Mex Chopped Salad

Ingredients
  

  • 4 Tbsp taco seasoning
  • Mixed greens
  • 3 cups chicken cooked and shredded
  • 4 cups Romaine lettuce chopped, about 1 head
  • 2 Roma tomatoes diced
  • 1 cup corn kernels fresh or frozen
  • 1/2 cup red onion
  • 1 15 oz can black beans drained and rinsed
  • 1/4 cup cilantro chopped
  • juice of 1/2 of a lime
  • Avocado sliced
  • Dressing Choices Southwest Ranch Dressing Low-fat sour cream and salsa, Lime juice and salsa

Method
 

  1. Start by placing your chicken in your crockpot and sprinkle the taco seasoning. Cook on low 4 hours or until done and shred and place in a bowl
  2. Chop up your mixed greens into smaller pieces and place in a bowl.
  3. Dice up the onion and tomatoes (remove seeds as well), place in a bowl and add in the black beans and corn.
  4. Take a portion from each bowl to build your salad and top with avocado and your choice of dressing. Enjoy!
