Spiced Gingerbread Granola

Ingredients
  

  • 3 cups rolled oats
  • 1/2 cup nuts of choice almonds, pecans, or walnuts work great
  • 1/4 cup chia seeds or flax seeds
  • 1 tbsp ground cinnamon
  • 3/4 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/4 cup coconut oil
  • 1/2 cup maple syrup
  • 2 tbsp molasses
  • Splash of vanilla extract

Method
 

  1. Preheat your oven to 325°F (163°C) and line a large baking sheet with parchment paper or a silicone liner to prevent sticking. In a large mixing bowl, combine the rolled oats, nuts, ground cinnamon, ginger and cloves. In a separate small bowl or measuring cup, whisk together coconut oil, maple syrup, molasses, and vanilla extract until well blended.
  2. Pour the wet ingredient mixture over the dry ingredients and stir thoroughly until the oats and nuts are evenly coated. Transfer the granola mixture onto the prepared baking sheet. Use a spatula to press the granola firmly into an even layer, helping it sticks together as it bakes.
  3. Place the baking sheet in the preheated oven and bake for 20 minutes. Halfway through, check to ensure even baking and gently press again if needed. Remove from oven and allow the granola to cool on the baking sheet for 15 minutes. This cooling step lets it harden and makes it easier to break into chunks.
