Smothered Burritos

Ingredients
  

  • 1 pound ground beef or shredded chicken
  • 1/2 large onion, diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried cilantro
  • 1 (16 ounce) can refried beans
  • 1 (10 ounce) can enchilada sauce
  • 8 small flour tortillas
  • 1 1/2 shredded Mexican blend cheese
  • 1 tomato, diced

Method
 

  1. 1. Preheat the oven to 350°F.
    2. Cook the ground beef and diced onions in a large skillet. Add in the seasonings. Once cooked add in the refried beans and mix well.
    3. In a 9×13 casserole dish pour half of the enchilada sauce. Fill your tortillas with the filling and tuck the ends in and roll into a burrito.
    4. Place your burritos in your casserole dish, pour the remainder of sauce on top and top with cheese.
    5. Cook at 350 for 20 minutes. Serve with a side of rice, lettuce, salsa, guacamole and sour cream!
