Ingredients

  • 1 flatbread pizza or regular pizza dough I love the one from Trader Joe’s!
  • 1 jar of bruschetta sauce or regular pizza sauce
  • ¼ onion sliced and caramelized
  • 1 sausage link removed from casing and cooked
  • Mozzarella cheese sliced or shredded
  • Arugula for topping
  • Olive oil for drizzling

Method

Prep your base:
  1. Lay out your flatbread, pre-baked pizza crust, or rolled-out pizza dough on a baking sheet. Spread a generous layer of bruschetta or pizza sauce over the top.
  2. Add the cheese:
  3. Top the sauce with sliced or shredded mozzarella — whichever you prefer.
Layer on the flavor:
  1. Add your caramelized onions (so sweet and golden!) and the cooked sausage.
Bake it up:
  1. Bake at 400°F for 10 minutes, or until the cheese is melted and bubbling and the edges are crisp.
  2. Finish with freshness:
  3. Remove from the oven and top with a handful of arugula. Drizzle lightly with olive oil, slice, and enjoy!

Notes

Storage:
Store any leftover pizza in an airtight container in the fridge for up to 4 days. You can pre-slice it for ease, or leave it whole.
When you're ready to enjoy, place pizza on a parchment-lined baking sheet and reheat at 375°F until the cheese is hot and bubbly, about 10 minutes. You can also reheat in an air fryer (per the air fryer instructions) or on the stovetop in a skillet over medium heat (add a splash of water around the pizza and cover), until the crust is crisp and the cheese is melty.
You can freeze leftover pizza, too. Wrap well and store for up to 3 months. We suggest removing as much arugula as possible before freezing, as it won't thaw well. When you're ready to eat, cook from frozen in the oven at 400°F until hot and crisp on the bottom. You can also try the air fryer or skillet method, above.
You can make this pizza ahead of time. Assemble and layer on all the ingredients, except for the arugula, then cover and store in the fridge. When you're ready to eat, cook according to the instructions and top with arugula.
