Salami Cheese Roll Ups

Ingredients
  

  • 1 garlic and herb Boursin cheese
  • 1/4 C chopped red pepper
  • 1/4 C onion, diced
  • Hard salami

Method
 

  1. Start by laying out a piece of plastic wrap. Lay out 6 slices of salami, overlapping so there are no gaps, to form a rectangle. I used 24 slices total.
  2. Spread the cheese on top, evenly sprinkle on the pepper and onion.
  3. Roll up tightly, starting with the long side for smaller-diameter roll-ups -- or starting with the short side for larger, wider roll-ups. Wrap in the plastic wrap and place in the refrigerator for 2 hours. Take out, unwrap and cut into slices.
  4. Serve immediately with cracker.
