Roasted Corn Salsa

Ingredients
  

  • 1 ½ cups roasted corn or canned/ fresh
  • 1/2 C red onion diced
  • 1 C tomato diced
  • 1 14.5 oz can black beans
  • 1/2 C bell pepper diced
  • 3/4 C cucumber diced
  • 1 avocado diced
  • 2 T lime juice
  • 1/3 C olive oil
  • 2 T honey or agave nectar
  • 2 T minced garlic
  • 1/2 tsp onion powder
  • 1/2 tsp cumin
  • Salt & pepper to taste
  • fresh cilantro chopped

Method
 

  1. in a large bowl, add everything but the avocado, lime juice, agave, olive oil and garlic.
  2. In a separate bowl add the olive oil, lime juice, agave, garlic and seasonings. Mix well and pour over top. Let chill in the fridge. Right before serving, add in the avocado. Enjoy!

    Notes

    I buy roasted corn frozen from Trader Joe’s and find it at whole foods or Kroger’s! Or you could girl some fresh corn and cut it off the cob!
