Pumpkin Swirl Bread

Ingredients
  

  • Use either boxed pumpkin mix and follow the directions or here is a Homemade Pumpkin Bread Recipe!
  • 1 C pumpkin puree (not pumpkin pie filling)
  • 1 large egg
  • 3/4 C light brown sugar
  • 1/4 C oil
  • 1 tsp vanilla extract
  • 1/2 tbsp pumpkin pie spice
  • 1 C all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • Cream Cheese Filling
  • 1 large egg
  • 4 oz cream cheese softened
  • 1/4 C granulated sugar
  • 3 tbsp all-purpose flour

Method
 

  1. 1. Preheat oven to 350. If using boxed pumpkin mix, follow the box direction for mixing up the pumpkin bread.
    2. If making homemade version, start by combining pumpkin, egg, brown sugar, oil, and vanilla extract in a large bowl. Fold in the pumpkin spice, flour, baking powder, baking soda, salt just until just combined.
    3. In a bowl, mix the cream cheese ingredients together.
    4. In a greased loaf pan, add half of the pumpkin mixture. Pour cream cheese mixture on top and take a knife to swirl it around. Pour the remaining pumpkin mix on top.
    5. Bake at 350 for or 45-55 minutes or until a toothpick comes out clean in the center. Let cool for 15 minutes before removing from loaf pan.
