- In a skillet add the butter, garlic and corn and cook for 8 minutes. Add in the green chilies or jalapeƱos, spices, sour cream, cream cheese and mayo and mix well.
- Mix in 1/4 cup cotija, place mixture in an oven safe dish, then sprinkle the remaining 1/4 cup on top. Broil for 3-4 minutes on high. Take out and sprinkle chopped cilantro on top.
- Serve immediately with tortilla chips!
- *** you could also do this in a crockpot and keep on warm/ low setting!Enjoy!
