Mexican Street Corn Dip

Ingredients
  

  • 2 cups of corn
  • 1/4 cup sour cream
  • 1/4 cup mayo
  • 4 oz cream cheese
  • can diced green chilies or jalapeƱos
  • 1/2 cup cotija
  • Fresh cilantro
  • 1 tsp cumin
  • 1 tsp chili powder
  • salt & pepper to taste
  • 2 cloves garlic
  • 2 tablespoons butter

Method
 

  1. In a skillet add the butter, garlic and corn and cook for 8 minutes. Add in the green chilies or jalapeƱos, spices, sour cream, cream cheese and mayo and mix well.
  2. Mix in 1/4 cup cotija, place mixture in an oven safe dish, then sprinkle the remaining 1/4 cup on top. Broil for 3-4 minutes on high. Take out and sprinkle chopped cilantro on top.
  3. Serve immediately with tortilla chips!
  4. *** you could also do this in a crockpot and keep on warm/ low setting!
