- 1 lb pasta
- 1 lb cleaned shrimp
- 1/2 C cherry tomatoes, diced
- 3T chopped parsley
- 2 T olive oil
- 2 avocados, diced
- 1/2 C basil pesto
1. Fill a pot with water and let boil. While you wait for the water to boil dice up your avocado, tomatoes and chop up your parsley.2. Once the water is boiling, add in pasta and let cook until al dente. In a pan place your shrimp in the pan with the butter, salt, pepper, and garlic and let saute for 5 minutes. in a bowl mix together the avocado, tomatoes, pesto, parsley and olive oil. Set aside.3. Drain pasta, place in a large dish, top with shrimp, top with avocado mixture. Serve Immediately!4. Enjoy!
