Karen's Chicken Tequila Pasta

Ingredients
  

  • 1 package fettuccine pasta
  • 1/3 C cilantro
  • 2 T minced garlic
  • 2 T minced jalapeno
  • 3 T butter
  • 1/2 C chicken stock
  • 3 T tequila
  • 2 T fresh lime juice
  • 3 T soy sauce
  • 4 chicken breasts, cubed
  • 1/4 red onion, sliced
  • 1 red bell pepper, sliced
  • 1/2 yellow bell pepper, sliced
  • 1/2 green bell pepper, sliced
  • 1 1/2 C heavy whipping cream

Method
 

  1. 1. Pour soy sauce over chicken and let set for 5 minutes.
    2. In a medium sauce pan, sauté cilantro, garlic, jalapeño in 2T butter for 4-5 minutes. Add in the chicken stock, tequila and lime juice. Bring to a boil and cook until reduced, add in cream, let cook and get slightly thick. Set aside.
    3. Sauté the chicken in a large skillet with onions for 10 minutes. Add in peppers and remaining butter and let cook through.
    4. Get your fettuccine cooked!
    5. Place your fettuccine on a plate, top with chicken mixture, pour sauce on and top with shredded Parmesan cheese.
    6. Enjoy!
