- 1 lb. ground beef
- 1/2 C chopped onion
- 1 1/2 C mixed frozen veggies
- 1/2 C chopped cabbage (optional)
- 1/2 C chopped zucchini (optional)
- 1/2 C chopped mushrooms (optional)
- 1 14 oz can kidney beans, drained
- 1 14 oz can diced tomatoes
- 5 C beef broth
- 2 T tomato paste
- 2 C cheese tortellini
- 2 cloves garlic, minced
- salt and pepper to taste
- 1 tsp garlic salt
- 1 tsp basil
- 1 tsp 21 seasoning salute (optional)
- parmesan cheese for topping
In a large pot, drizzle some olive oil and add your garlic, onion and ground beef. Cook until beef is cooked through. Add in the rest of your veggies and let cook for 5 minutes.2. Add in your kidney beans, tomatoes, paste and broth and give a good stir. Add in the seasonings and let simmer for 10 minutes. Add in the tortellini.3. Let the tortellini cook until soft, serve immediately! Top with Parmesan cheese and serve with crusty bread.4. Enjoy!
